This Bruschetta is packed with fresh flavours you will love. Creamy pesto base on a toasted sourdough bread, topped with fresh tomatoes and our Fresh Mozzarella Slices. YUM!
200g | Fresh Mozzarella Slices |
6 slices | pane di casa or sourdough bread |
3 x | ripe tomatoes, coarsely diced |
4 tbsp | olive oil |
1/2 cup | basil leaves |

Pesto

20g | Grated Parmesan Tub |
2 x | garlic cloves |
20g | pine nuts |
1/3 cup | olive oil |
4 cups | basil leaves |
1 | For the Pesto, place garlic, pine nuts and a pinch of salt into the bowl of a small food processor and blitz to form a coarse paste. Add basil and pulse to form a paste. Drizzle in olive oil with the motor running to emulsify. Add parmesan and pulse to combine. Season to taste with salt & pepper. |
2 | Preheat grill to med/ high. Place mozzarella, tomatoes and basil into a medium bowl, add 2 tbsp olive oil, season with salt & pepper and mix well to combine. Drizzle the bread slices with 2 tbsp olive oil and toast both sides. |
3 | Spread the toasted bread with pesto and pile the bruschetta mix on top. Garnish with basil leaves. |
