We love this recipe for so many reasons. Not only is it absolutely delicious and soooo addictive, the zucchini fries are baked and not fried, and it’s a great way to enjoy an extra serve of veggies. This might just in fact be your new favourite way to eat zucchini. Loaded with flavour and baked to golden perfection!
|1/2 cup||Grated Parmesan|
|2 x||zucchini (large)|
|1/2 cup||panko crumbs|
|olive oil spray|
|1||Preheat oven to 200degrees. Line a large baking tray with baking paper.|
|2||Cut zucchini 1cm thick batons. Place in a colander & sprinkle with salt & toss to coat. Set aside for 10 minutes to drain & then pat dry with paper towel.|
|3||Combine parmesan & panko crumbs in a bowl. Place egg in in a separate bowl & whisk.|
|4||Working in batches, dip zucchini batons in egg, draining off excess. Toss in parmesan & panko mixture to coat.|
Place, in a single layer, on the prepared tray and spray with olive oil. Bake, turning chips every 10 minutes for 25-30 minutes or until golden and crisp.
