Grilled Bruschetta with Fresh Pecorino, Pancetta and Pesto

Ingredients

8 slices Fresh Pecorino Style Cheese
8 slices crusty white bread
8 slices hot pancetta
8 tspn basil pesto
freshly cracked black pepper

Preparation

1 Lightly toast both sides of the bread.

2 Remove from grill/toaster. Place a piece of pancetta on each and drizzle over the pesto. Top with the slices of Fresh Pecorino.
3 Grill until the cheese is melted, golden and bubbling. Grind black pepper over bruschettas and serve.
