| 250g | Mozzarella Ball |
| 2 bunches | fresh asparagus |
| chilli, diced, optional | |
| salt and pepper to serve |
| 1 | Preheat oven grill to a moderate heat setting. |
| 2 | Wash and trim the asparagus. |
| 3 | Boil water in a kettle. Once it comes to a boil, carefully pour it into a fry pan. Turn heat on high to keep the water at boiling temperature. Add a tablespoon of salt. |
| 4 | Prepare a bowl of ice water nearby. |
| 5 | Using tongs, carefully place the asparagus into the boiling water. Set a timer for two minutes and then remove asparagus from the boiling water when it becomes bright green. Submerge the asparagus directly into the ice water. After a minute or two, remove from the ice water and place asparagus onto a clean tea towel to dry. |
| 6 | Prepare a small baking dish. Place asparagus on the baking dish in a row, with sides touching. Grate a generous amount of Mozzarella over the top and chilli if desired. |
| 7 | Grill until Mozzarella is golden. Serve immediately with cracked pepper and a sprinkle of salt. |
