Simple Caprese Bruschetta, perfect for a lazy weekend meal.

Ingredients

125g Fresh Mozzarella Bag
1 stick of French bread
2 small Tomatoes
1 handful Fresh Basil
Extra Virgin Olive Oil
Salt and Pepper to taste

Preparation

1 Preheat oven to 150C. Line a baking tray with foil or baking paper.
2 Drain the Fresh Mozzarella and tear into strips. Chop tomatoes and place in a bowl.
3 Cut bread into slices. Place a strip of cheese onto each slice.
4 Place bruschettas on a baking tray and bake about 5-10 minutes or until cheese melts and bread is slightly crispy.
5 Top each slice with fresh tomatoes, basil leaves, a drizzle of oil, salt and pepper. Serve while hot.
