125g | Fresh Mozzarella Bag |
1 | stick of French bread |
2 | small Tomatoes |
1 | handful Fresh Basil |
Extra Virgin Olive Oil | |
Salt and Pepper to taste |
1 | Preheat oven to 150C. Line a baking tray with foil or baking paper. |
2 | Drain the Fresh Mozzarella and tear into strips. Chop tomatoes and place in a bowl. |

Cut bread into slices. Place a strip of cheese onto each slice. |
4 | Place bruschettas on a baking tray and bake about 5-10 minutes or until cheese melts and bread is slightly crispy. |
5 | Top each slice with fresh tomatoes, basil leaves, a drizzle of oil, salt and pepper. Serve while hot. |
