Beat the heat: if it is a particularly hot day and you are entertaining outside, split your platter contents into two trays. Store the reserve tray in the fridge and swap them out halfway through the party.

Dips: mix it up! But think about flavours that complement your spread
Crackers: use two different types + fresh bread, which is key
Garnish: a sprig of something green goes a long way visually
