Zucchini and Haloumi Fritters
cup Self-raising flour
Medium Zucchini, grated
Green onions, sliced
cup Fresh parsley
cup Fresh mint
Lemon, to serve
Aioli, to serve
To make the batter, put flour in bowl and make a well in the center. Whisk milk and egg together and pour into well. Mix together until smooth.
Pat moisture out of grated zucchini with a paper towel. Grate haloumi over grated zucchini. Mix together with onion, parsley, and mint. Then add with flour mixture and mix through until even.
Heat oil in a frying pan. Divide mixture into four patties. Flatten and then cook in pan until lightly golden on each side and cooked through in the middle.
Serve with lemon and aioli. Suggest serving on a bed of spinach with pearl couscous, red onion, avocado and parsley.
