1. Beat egg yolks together with sugar in a bowl until mixture is frothy.
  2. Stir in Brandy Flavoured Double Cream (or Mascarpone) and mix carefully. Add the whipped egg white. Mix well until mixture is smooth and creamy.
  3. Soak lady fingers (both sides) with coffee or espresso in a short dish.
  4. In a baking dish, spread a layer of the cream mixture. Then add a layer of soaked lady fingers. Repeat. Then finish with a layer of cream at the top.
  5. Using a sieve, sprinkle the powdered cocoa evenly across the cream.
  6. Refrigerate for at least 2 hours. Tiramisu is best served when prepared at least one day in advance. Enjoy!
