Grilled Kangaroo and Haloumi
tbsp Lemon juice
tspn Dried oregano
tspn Chopped rosemary
Clove garlic, minced
olive oil spray
Lemon, to serve
Fresh herbs such as oregano or thyme, to serve
Chop kangaroo fillet into bite size pieces. Combine kangaroo pieces, lemon juice, oregano, rosemary and garlic in a bowl and make sure marinade coats all of meat. Let stand for at least 20 minutes.
Preheat BBQ or grill pan to medium to high heat. Thread meat onto skewer, followed by cheese and a tomato. Repeat. Thread 6 skewers. Spray kebabs with oil.
Cook each kebab for a few minutes on each side.
Squeeze over lemon juice and garnish with herbs to serve.
