Boil water in a kettle. Once it comes to a boil, carefully pour it into a fry pan. Turn heat on high to keep the water at boiling temperature. Add a tablespoon of salt.
Prepare a bowl of ice water nearby.
Using tongs, carefully place the asparagus into the boiling water. Set a timer for two minutes and then remove asparagus from the boiling water when it becomes bright green. Submerge the asparagus directly into the ice water. After a minute or two, remove from the ice water and place asparagus onto a clean tea towel to dry.
Prepare a small baking dish. Place asparagus on the baking dish in a row, with sides touching. Grate a generous amount of Mozzarella over the top and chilli if desired.
Grill until Mozzarella is golden. Serve immediately with cracked pepper and a sprinkle of salt.
