Ingredients

  • 200gCherry Bocconcini
  • 4Large slices of Ciabatta bread
  • 300gCherry Tomatoes
  • 200gKalamata Olives
  • 1handful Fresh Basil
  • Extra Virgin Olive Oil
  • Salt and Pepper to taste

Preparation

  1. Preheat oven to 150C. Line a baking tray with foil or baking paper.
  2. Drain Bocconcini. Chop tomatoes and olives in half. Tear Basil into pieces. Mix all ingredients in a bowl.
  3. Arrange all toppings from Step 2 on 4 pieces of bread. Place bruschettas on a baking tray and bake about 5-10 minutes or until cheese melts and bread is slightly crispy. Serve hot.
