7th World Pizza Championship Australia!

7th World Pizza Championship Australia!

La Casa Del Formaggio was honoured to be the sole cheese partners for the 7th World Pizza Championship Australia hosted by Pizza Revolution this week! It was such a fun competition where we got to watch some of Australia’s most talented pizza makers battle it out for the coveted prize of joining the world’s elite in the Parma Italy World Comp next year.

Our Managing Director Claude served on the judging panel and was especially looking for a nice even cheese melt with no blistering. 👌🏽

Congratulations to all who participated and well done to the winners (below)!

La Casa Del Formaggio Wins Innovation Award!

La Casa Del Formaggio Wins Innovation Award!

La Casa Del Formaggio has won the prestigious SARDI Innovation Award in the 2015 South Australian Food Industry Awards Program. The award was announced at the annual Gala Dinner organised by Food SA, the state’s peak industry body for the food industry.

The award recognised an innovative change to milk supply relationships; how La Casa Del Formaggio sourced milk to make high quality fresh cheese. Rather than buying milk from a bulk milk supplier, La Casa Del Formaggio formed partnerships with seven family farms located in the beautiful, lush Mt. Compass and Myponga region of the Fleurieu Peninsula, South Australia. These farms supply fresh milk seven days a week. The partner farms were selected because of their quality, the terroir of the Fleurieu region (which is reflected in their milk) and specific herd mix of Friesian and Jersey cows, which delivers the perfect balance of butter fat and protein in the milk to make it perfect for cheesemaking.
“This innovative approach delivered advantages at multiple levels” says Claude Cicchiello, Managing Director of La Casa Del Formaggio. “It delivered a price stability advantage for La Casa Del Formaggio, a price/volume stability advantage for the farmers, a level of authenticity, terroir and provenance for the La Casa Del Formaggio brand, confidence of quality for the consumer and an embodiment of the South Australian industry food strategy all in one initiative.”

“We’ve noticed an improvement in the quality, taste and texture of our cheeses since moving to direct milk supply, and we’ve received quite a bit of customer feedback that confirms our observations.”
The close working relationship with a small number of premium dairy farmers has allowed La Casa Del Formaggio to be confident in consistently high quality milk which in turn is now reflected in their cheese products. It has also allowed the dairies to work with La Casa Del Formaggio to carefully and consciously build quality through continuous improvement.

“At La Casa Del Formaggio, we are passionate about sharing our authentic family cheese tradition from Italy with Australia,” says Claude Cicchiello. That passion and commitment to authenticity and quality is self-evident in the La Casa Del Formaggio range of products; a commitment to authenticity, for example, that means that La Casa Del Formaggio continues to resist the market pressure to put shelf-life extending chemicals into their fresh ricotta.

La Casa Del Formaggio’s Fresh Salad Bocconcini with Mediterranean Marinade wins Most Innovative Product Gold Medal

La Casa Del Formaggio’s Fresh Salad Bocconcini with Mediterranean Marinade wins Most Innovative Product Gold Medal

La Casa Del Formaggio’s Fresh Salad Bocconcini with Mediterranean Marinade in a 200g packsize has received the Gold Medal in the CLASS: 49 Most Innovative Product and/or Package of any Variety of Cheese category at the Sydney Royal Dairy Awards on February 15th, 2013. This product achieved the criteria to be honored with the gold medal in areas of packaging, innovation and product quality.

A completely new and novel product to the marketplace, La Casa Del Formaggio’s Fresh Salad Bocconcini with Mediterranean Marinade combines bocconcini in its freshest form (preserved in brine) with an herb marinade sachet placed on top of the lid from Queensland-based Gourmet Gardens. The consumer only needs to tip the brine, add the marinade and shake or stir to combine for instant antipasto or a flavourful addition to a salad or entrée. Salad Bocconcini are a fresher, healthier style of marinated cheese. The Mediterranean marinade consists of garlic, capsicum, basil and oregano. This product was launched with two companions:

“By offering a fresh herb marinade, we are enhancing our much loved bocconcini with the clean, delicious flavours of fresh herbs. As we all know, herbs and cheese are a match made in heaven and Fresh Salad Bocconcini with Mediterranean Marinade plays to the strength of this wonderful combination,” said Marketing Coordinator Lauren Llewellyn. “We are honoured and thrilled to receive this recognition from the Sydney Royal Show for our new product.”

Other La Casa Del Formaggio products received silver medals, including:

  • Traditional Ricotta 1kg in Class 24: Ricotta Cheese, unbaked category
  • La Bianca Mozzarella-style Cheese 350g in Class 31: Cheese, Mozzarella Stretched Curd category
  • Traditional Bocconcini 220g in Class 30: Bocconcini category
  • Mascarpone 250g in Class 32: Cheese, Mascarpone category

These cheeses are available in premium supermarkets, delis and continental shops throughout South Australia.
